WildCheff Artisan Sugar Blends are made from medium or large jewel-like crystals of Hawaiian cane sugar flecked with lively ingredients. Stellar mixtures, hand-blended, small batches to ensure quality and freshness. Unique, memorable combinations utilize pure, natural, premium ingredients. Citrus is freshly grated, coffee is fair trade and freshly ground, spices and herbs are freshly ground or chopped. Use to enhance the flavor and texture of sweet and savory dishes. Our blends add final flare and crunch to fresh and cooked dishes and baked goods. All are wonderful on toast, hot cereal, yogurt, ice cream, cottage or ricotta cheese, in fruit salad.

WildCheff Artisan sugars are derived from natural sources in Hawaii to help you create sensational flavor accents to your food!!!

WildCheff’s Orange Ginger Sugar Blend is an assertive blend of fresh-grated orange zest, spicy ground and crystallized ginger, pale ivory natural Hawaiian cane sugar crystals. Fills the senses, long finish (I know this sounds like wine-speak, but it is true!), nice chewy surprises from the crystallized ginger. Top pumpkin bread, cookies, scones before baking. Scatter Orange Ginger Sugar over pistachio ice cream or cheese cake. Glaze organic pork or wild boar, game birds,   organic poultry, fish (steelhead, tuna or salmon in particular), vegetables (carrots, sweet potatoes, winter squashes, parsnips).

Fresh lemon zest and pale ivory natural Hawaiian cane sugar crystals are used to craft WildCheff’s Lemon Sugar Blend. So versatile for bakers: use in fruit crisp or coffee cake topping, on blueberry muffins, butter/sugar cookies, scones, or sweet breads before baking. Also use to glaze butter-sautéed vegetables or fruit (pears, apples, pineapple), in beverages or as a cocktail rimmer. Just a dusting on fish, in a rub for pork, antelope, wild boar, game birds or organic poultry. Use Lemon Sugar in place of brown sugar in the classic fresh strawberry-sour cream-sugar dip.

Sugar is turbinado-style with high molasses content. Crunchy like candy, tastes like apple pie.  This is a perfect sprinkled on cookies, bars, scones, muffins, sweet breads before baking. In apple pie, baked apple, applesauce. Try on top of pumpkin pie, bread pudding before baking. Top butter-cooked vegetables. You might find yourself eating this irresistible blend right out of the bag.

Fresh-grated lime zest, partially dried fresh mint, pale ivory natural Hawaiian cane sugar. As the name implies, Mojito Sugar is the perfect cocktail rimmer! Also sprinkle on carrots or  scatter on fresh peas. Finish a dish of scallops or sprinkle on salmon. Try on game birds and organic poultry. Delightful on muffins, scones, cookies before baking. ExpressoSugar.jpg

WildCheff’s Espresso Sugar Blend is made with aromatic fresh-ground, espresso coffee beans (yes, this is made with real, caffeine-loaded coffee beans-you’ve been warned!), pale ivory natural Hawaiian cane sugar crystals. Our favorite breakfast: toast, peanut butter, coffee sugar. It’s all you need…maybe add some sliced bananas. Some great uses for our Espresso Sugar: sprinkle on muffins, cookies, brownies, banana bread    before baking. Finish chocolate or vanilla sauces or desserts. Fine on bacon (yes!), pork and wild boar dishes, in a rub that is used on dark meats such as game or organic beef.
